Peanut Butter and Chocolate Club Cracker Bites

  • cookbook1-1/2 cups brown sugar
  • 1 cup white sugar
  • 2/3 cup milk
  • 1 cup butter (2 sticks)
  • 2 cups gram cracker crumbs (Buy a box of gram cracker crumbs , it’s easier than pounding your own)
  • 1 box Club crackers
  • 1-1/2 cups Creamy Jiff peanut butter
  • 12 oz milk choc. chips

In a saucepan, heat brown and white sugars, milk and butter until melted. Add gram cracker crumbs and boil until thick, about 6-7 minutes. Lay one layer of  club crackers out onto a small jellyroll pan (crackers should fit perfectly). Pour half the mixture over the crackers. Add another layer of crackers and pour the remaining mixture on top. Add third layer of crackers and refrigerate for at least 1 hour.

Melt together the peanut butter and choc chips over low heat or in the microwave in 30 second intervals. Pour over the top and refridgerate again. Cut into small squares.
